Bearcat or Big Bearcat is a poker term that defines ANY community card that comes up on the board that fundamentaly changes the dynamics of a hand. Someone who had a great hand - may be in big trouble, while the other person "hit" their card. Typically a bearcat will occur on the turn or river.
Say play is heads up Ace/Ten for one player, K9 of spades for another and the flop (the first 3 community cards) are A(spade), Ten(spade), and 8 (heart). There is likely to be betting and possibly raising because one person has 2 pair and the other player has the nut flushdraw, suppose the turn, the 4th community card is revealed and it is a Jack of spades - this is a Bearcat because now the possibility of a straight, a flush, or even a royal flush exists! Mr. 2 pair cannot be as happy with his hand now because he could be severly beaten.
Now suppose another Ten shows on the river - this would be a BIG bearcat as now the Ace/Ten holder has a full house and can be more certain about their hand being a winning hand.
Typically it is impossible to get away from an all in moment when a bearcat shows up.

In no limit holdem poker, on the turn or river, any card appears. Someone who is not necessarily involved in the hand says "ooh big bearcat"... That person is a Bearcat. The card that appears is just a card.
