An end-of-the-meal amuse bouche. Like an amuse bouche, a derange bouche is not ordered from a menu by patrons but rather served free and according to the chef's selection alone. However, it is served at the end of a large meal, usually long after anyone wants any more food and only because they are delicious - often chocolate or sweets that are practically coercive. The result is a diner happy for a moment but riddled with longer-lasting guilt and discomfort for having overeaten. Often styled as petits fours or mignardises.
Surprisingly the seven course meal was an appropriate amount of food, until that derange bouche put us over the top. Total wasted calories.
